1. Ensure that a high level of sanitation and cleanliness is maintained before, during and after each shift.
2. During closing shifts, be responsible for the Banquet Summary to be completed accurately, that all checks are signed, and charges recorded as per Banquet Event Orders (BEOs).
3. Keep constant contact with the contact person of each group and relay any pertinent information to any area that could be affected by any changes.
4. Attend BEO meetings in the absence of the Banquet Manager and relay any pertinent information to any area that could be affected by any changes.
5. Review all BEOs.
6. Review any changes on BEOs, guarantees, times, set-up requirements, or beverage requirements.
7. Check staffing for each function.
8. Conduct daily roll calls using flip charts for work distribution and station assignments, order of service, and closing work assignments. Conduct pre-meal briefings, and pre-function briefings.
9. Coordinate pick-up times with kitchen.
10. Up sell wine and hors d'oeuvres.
11. Critique each function on Banquet Manager's Critique Form.
12. Help Banquet Maitre d' in checking the schedules for the following day.
13. Ensure that all functions are completely set 15 minutes before the scheduled time.
14. Interview and hire staff.
15. Supervise and direct all areas of bar operations utilizing SOPs, bar guides, and hotel policies.
