Culinary Product Standards and Costs
1. Ensuring that all food products are produced effectively, efficiently & to the agreed specifications.
2. Ensuring that agreed product yields are achieved, through appropriate sourcing, preparation, cooking, portioning & final dishing / presentation.
3. Motivational management of the teams' performance to maximize productivity on a shift by shift basis.
4. Ensuring that all technical malfunctions of plant & machinery are proactively rectified.
5. Delegating responsibilities & making sure that the appropriate manpower can fulfill the product demands on a 24 / 7 basis.
6. Coordinating with the General Manager and HR and administration Manager in respect of the recruitment of necessary manning levels manpower to ensure 5 above.
Service
7. Maintain regular contact with both internal & external customers, ensuring that production issues are identified & promptly rectified.
8. Ensuring that your team contribute positively to achieving the expected level of internal & external customer service.
9. Designing, monitoring & reviewing plans to implement changes to customer requirements.
10. Regular evaluation of product quality & standards.
11. Providing expert knowledge & product advise for external & internal customers on all production & food related issues.
12. Investigating, communicating & effectively rectifying all food related issues / complaints.
13. Conducting bi-weekly visits to RJ Crew Centre in conjunction with the Executive Chef for briefings & feedback purpose.
14. Conducting bi-weekly visits to CIP Lounges in conjunction with the Executive Chef to evaluate the presentation, handling & availability of product, providing feedback or action taken.
15. Take a role in the planning & organization of all customer food presentations, ensuring that they are professional & cost effective.
16. In conjunction with the purchasing & stores manager seek to develop new product from the local markets in order to reduce dependency on imports.
17. Coordination with the operation department in relation to the produced & distributed dispatch sheets in order to plan for the production loads follow up on any upcoming changes & ensuring that any related data is being delivered to the designated personnel & in a timely manner.
18. Coordinating with the receiving team & on daily basis to ensure the proper receipt of all the primary products needed for the production process & according to the agreed upon specifications & quantities.
19. Ensuring that all staff are constantly trained to effect good food portion control & pleasing presentation of all dishes.
20. Ensuring that all stocks are ordered to the correct quantities, quality & that they are being kept securely under the correct conditions applicable to each type of commodity stored.
Compliance
21. Instigating & maintaining best practice to ensure that all aspects of food production compliance is achieved.
22. Ensuring that daily compliance of all food safety procedures, including all HACCAP due diligence documentation are enforced. Initiating & communicating remedial action when compliance is not met for any reason.
23. Monitoring performance & ensuring corrective action plans are introduced & reviewed as required.
24. Ensure that fire & safety procedures & training are implemented & that all team members are familiar with same.
25. Ensuring that the security procedures are rigidly enforced in accordance with the regulations in place from time to time.
26. Ensuring that the premises & equipments utilized by the department is maintained to the highest standards of cleanliness & that all cleaning schedules are performed adequately.
27. Ensuring that full efficiency of the QA stewarding team through monitoring the cleaning schedules & reporting to the Quality Assurance Manager any deviations.
